Start with the best turkey you can find.
Of the 242 million turkeys raised this year, maybe 30,000 of them are not the standard supermarket variety of broad-breasted whites. Heritage breeds have fuller flavor, firmer meat, and basically taste like a turkey should taste. You’ll have to seek out a heritage bird, but it's worth it.
