A new location of Boichik Bagels is set to open in Santa Clara this summer, says owner Emily Winston.
The move, she says, was driven by South Bay demand and a desire to offer corporate catering options.
"We've got a lot of fans in San José who have been clamoring for something closer than Palo Alto," Winston says.
The dough will come from the bagel shop's plant in West Berkeley, slated to open by the end of next month. The plan is to prep the dough and cream cheeses there and then transport it to the various bagel shop locations to boil and bake the bagels fresh every morning in the stores.
Once the plant is up and running, the pastry program will return, offering items like black and white cookies and rugelach.
The project has faced plenty of delays, but it's getting close, Winston says. "Construction is its own circle of hell. …but we can see the light at the end of the tunnel."
Once the plant is completed, it will enable Boichik Bagels to reach more and more people, she says, particularly when it comes to feeding workers at nearby campuses.
"If Google wants to order 5,000 bagels every Tuesday, we'll be able to do it here," she says.
One benefit of the Santa Clara location, she adds, is that it's going to offer outdoor seating and space for outdoor activities. Nestled in the Mission Park Marketplace development, the bagel shop she’s planning will offer table games like chess for Santa Clara customers and space for them to eat outside. The bagel shop will join other businesses there including Starbucks, Mendocino Farms, The Habit, Teriyaki Madness and Orangetheory.
"You'll be able to get a bagel, coffee, and a black and white cookie, hang out in the sunshine and play a game of chess – it's my mini trip to New York vision," Winston says.
As of now, the draft designs for the new shop are almost ready, and then they need to be approved by the city of Santa Clara. After that, it should take a couple of months to complete construction, she says.
