Babka bakery to open Thursday in Palo Alto

Come Thursday, Dec. 13, Palo Alto will get its very own babkery: a dedicated babka bakery.

Owner-namesake Ayelet Nuchi is opening Babka by Ayelet at Town & Country Village at 855 El Camino Real. On Monday, she was flitting around the bakery's open kitchen, busily rolling, cutting and braiding dough to make sweet and savory babka. The Jewish pastry is ubiquitous in her native Tel Aviv — like cupcakes in the United States, she said — and becoming increasingly popular in the United States.

"A butter and yeast dough with varied fillings create a comforting cake with a lot of love and history, especially in my childhood home," Nuchi writes on the bakery’s website.

Nuchi, a pastry chef, has run a catering company since 2000. Last summer, she decided to focus solely on her most popular catering item: babka.

Babka by Ayelet will serve not only the classic babka flavors of cinnamon and chocolate but also Nuchi's recipes for nutella, raspberry-cream cheese, apple, maple-pecan, halva and two savory flavors, tomato-mozzarella and butternut squash.

The bakery will also serve tea and coffee and espresso from Four Barrel Coffee in San Francisco.

The renovated, bright space (previously a blow-dry bar) has a large green velvet couch, marble tables and chairs and bookcases filled with books about baking, cooking, fashion and design. There is also outdoor seating.

Babka by Ayelet will be open daily from 9 a.m. to 7 p.m. The bakery is located at Suite 15 in Building 1 at Town & Country Village, next to clothing store Marine Layer.

I stopped into the bakery today and was lucky to try a sample. It was delicious! I'll be back ????.

I wish there were more 'real' bakeries with a wide variety of breads and pastries, and fewer 'one trick ponies' that just specialize in doughnuts, cupcakes or whatever it is.

My friend and I once went to buy a chocolate babka. Boy, what a night! An older lady bought the last chocolate babka right inf front of us and we had to settle on cinnamon bobka, which my friend Elaine considers a "lesser babka."
Then there was the bass music everywhere we went...crazy.

Great PR, but I predict they won't last. The combination of insufficient baked goods and slow service lead to long lines and no more baked goods by 3 pm. (Sign says they're open til 6.) Lowest priced item was $5. No thanks, I'll stick with Mayfield.

Sounds like text book new opening issues. It's extremely rare for the place to come out firing on all cylinders from day 1. It's the stuff that's easily adjusted once staff comes up to speed and they know their actual demand.

So you say they sold out of everything by 3PM? Yes, no way they can last with demand like that. LOL.

Sadly Ayelet is overwhelmed. The phone seems to be off the hook and she emailed that she is not taking orders until after 1/4. I think she needs more help!

Horrible service, no savory items except for one with dates and walnuts who is hardly savory! Uninformed servers to say the least.
Small sizes for $6.00
Won't last......
