Opening alert: Pieology in Palo Alto

Need another spot to flex your creative pizza-making muscles? Have no fear, create-your-own pizza chain Pieology is now open on El Camino Real in Palo Alto.

Pieology joins Pizza Studio, a very similar chain restaurant with a location just blocks away on California Avenue as well as in Mountain View. Pieology
took over the space
at 2305 El Camino Real (the corner of El Camino and Cambridge Avenue) after fast-casual burrito chain Freebirds closed in March.


Pieology, a fast-casual custom pizza chain, is now open in Palo Alto.

At Pieology, for $7.95, you get a 11.5-inch pie to dress with your choice of crust (housemade, whole-wheat or gluten-free), sauce (there are eight options) and more than 40 cheeses, meats, vegetables and other toppings. There's also a menu with set creations at the same price with the exception of one basic pizza (the "Easy Cheesy" with red sauce, mozzarella and olive oil for $6.45). View the menu here.

The customized pizzas are then cooked in a stone oven in less than three minutes. To finish, guests have the option to add after-bake "Flavor Blast" sauces, including fiery buffalo, pesto and BBQ.

For those avoiding carbs, the Palo Alto Pieology also offers custom salads ($9.95). Choose from three lettuce options (organic field greens, romaine hearts or spinach), unlimited toppings (meats, cheese, produce, beans, nuts and the like) and finish with your pick from the restaurant's five dressings (olive oil and vinegar, Caesar, ranch, Italian or light raspberry vinaigrette). Two pre-set salads (classic and Caesar) go for slightly cheaper ($7.95).

A public notice of application to sell alcoholic beverages posted in the restaurant's window indicates that beer and wine could also be on their way.

Founder and CEO Carl Chang created Pieology in 2011 with the goal of turning "America's most craveable food into an affordable and interactive experience," a company press release reads. The now franchised-company has more than 60 locations across the United States, with the majority spread throughout California. According to the press release, the massive expansion will continue: Pieology is on schedule to open 110 restaurants by the end of 2015, with commitments for 500 locations down the road.

The Palo Alto restaurant is open Monday through Thursday 11 a.m. to 9:30 p.m., Friday and Saturday from 11 a.m. to 10 p.m. and Sunday from 11 a.m. to 9 p.m.

Is this another chain?

Nothing against them, but Palo Alto doesn't seem to think chains should be allowed.

I hope it does well and people flock to it anyway.
